In this PR Steel-Foundation/SteelExtractor#20 I updated the extractor to use some enviroment variables for enabling/disabling some features. This PR updates to docs to reflect it.
I'm not going to lie, the table is pretty munted and hard to use. But in my defence, it was already pretty bad before I added a new collumn so it's not entirely my fault.
