docs: update the README to match current behavior - #1025

Show the Windows installer, note that every channel ships wright-lsp, and say that package-manager installs upgrade through their package manager instead of wright update. Correct the compile output name (<input stem>.ow) and the stdin rule, drop the build-from-source pointer that docs/release.md does not cover, and list the shipped OPY capabilities, convert, lookup, and wright agent install.
