README: fix stale 'early scaffold' status - #2

The core toolset (preflop ranges, push/fold trainer, hand-history import & leaks, Practice Your Leaks, bankroll tracker) has actually shipped and is tested + CI-green, but the README still described a placeholder home screen with nothing implemented. Replace "Planned features" with the real, verified list and point to ROADMAP.md for what's still ahead.
