fix(admin): restore client fingerprint fields

• restore the fingerprint default for VMess, VLESS, Trojan, and AnyTLS
• preserve supported fingerprint values through protocol schema parsing
• restore the fingerprint selector for TLS and REALITY configurations
• add regression coverage for defaults and schema parsing
