Add the Sharpa cube example and stop tracking uv.lock - #2

## Summary - New SimMPC example `09_sharpa_cube.py`: a Sharpa hand turns a cube about three axes. Later `sim_mpc` examples are renumbered. - Stop tracking `uv.lock`, which clears the lockfile's Dependabot alerts while Python 3.8 stays supported; skip embreex 4.4.0.post1, which ships no 3.8 wheel. - Tests use only local fixtures: the opt-in real-asset tests are removed, and doc examples that download assets are skipped by xdoctest. - Fix the stale `self_collision` example in the hand retargeting guide. ## Test plan - CI on this PR, Python 3.8 and 3.14.
