Replace the stale scaffold claims in the README and SECURITY with present-state: both BLE roles, the CLI, and the examples are implemented. Add a run-it-end-to-end guide (the make mechanism-ios path and the manual helper plus simblectl path) and a capability-token description. Update the mechanism-target note in the development doc.

simblectlCLI, and the example guest apps are implemented. Add a "Run it end to end" guide to the README (the one-commandmake mechanism-iospath and a manual helper plussimblectlpath), a capability-token description to SECURITY.md, and update the mechanism-target note in docs/development.md. Docs only; no code changed.
