Update the star history chart link to use a working provider. The current chart is broken due to GitHub stargazer API restrictions, so a fix is necessary.

The star history chart in the README is currently broken because the underlying star history API is no longer working due to GitHub stargazer API restrictions. This change points the chart to a working alternative provider so the chart displays correctly again.
