Companion to kubb-labs/kubb#3957, which lets dateType set date-time, date, and time independently instead of one value driving all three.

Updates the dateType option in adapters/adapter-oas/reference/options.md:

• The type column now shows the object form alongside the existing scalar union.
• The prose explains that stringOffset/stringLocal only apply to date-time and fall back to 'string' for date/time.
• Adds the object-form example with each key's default ('string' when omitted).
