🎫 Issue IBX-12041

Description:

Drops Symfony 7.4 and PHP < 8.5: symfony/* constraints become ^8.1 (DoctrineBundle ^3.1), php becomes >=8.5, and the CI matrix runs PHP 8.5 only.

This is part of the IBX-12041 Symfony 8.1-only batch and has to be merged together with the rest of it: once one package requires PHP 8.5 / Symfony 8.1, the CI of not-yet-merged siblings still running on PHP 8.4 cannot install it. Browser tests need the PHP 8.5 image from ibexa/docker#72.

For QA:

Verified locally on PHP 8.5 with Symfony 8.1.8 and DoctrineBundle 3.3.2: test suites, PHPStan and code style.
