fix(docker): renamed bluejay hosts

• Updated DEFAULT_VIEW, DEFAULT_CONTROLLER, and DEFAULT_MODEL environment variables to use bluejay-assets-manager instead of host.docker.internal for the bluejay-render service.
• Updated INFLUX_URL environment variable to use bluejay-influx-reporter instead of host.docker.internal for the bluejay-dashboard service.
