Closes #1146

Summary of Changes

• Updated apps/docs/architecture/monorepo.md to reflect the consolidated Vercel Serverless Functions layout under api/v1/:
  • Added admin/[resource].ts (/api/v1/admin/vault-state, /api/v1/admin/history)
  • Added keepers/[action].ts (/api/v1/keepers/*)
  • Added positions/[publicKey]/history.ts and positions/[publicKey].ts
  • Replaced the old individual tx/*.ts files with tx/[action].ts
• Updated the scripts/ directory annotation to accurately summarize all repository scripts including deployment (testnet/mainnet, external pinger), adapter redeployment, address verification, Vercel build, and load tests.
• Formatted file with Prettier and confirmed npx prettier --check apps/docs/architecture/monorepo.md passes.

@ibochielizabeth-spec this stays as the single path for #1146, and #1183 is being closed because it makes the same change. The one inline finding on #1183, that the admin handler is GET-only and not POST, is already correct in this diff. One item remains. Amend the commit header, currently 96 characters, to 72 or fewer.
