Project persisted entity definition bindings

Summary

• pin Protocol entities/v1 formal main and recognize entity/definition-bound in the existing SessionEvent projection
• expose the Session-persisted identity, digest, and definition without querying ctx.entities or a second ledger
• add snapshot/replay/live, unknown-event, architecture, and rendered-detail coverage
• record formal Protocol, Host, and Chatroom remote-main readback

• npm test -- --run test/session-store.test.ts test/view.test.tsx test/architecture-guard.test.ts (20/20)
• npm run check (27/27 plus typecheck/build/naming/package)
• npm pack --dry-run
• git diff --check
