chore: sync develop to main for v0.5.1 - #135

The push-to-main trigger failed on every main push because the deploy step requires GitHub Pages, which was never enabled for this repo; docs are hosted on Cloudflare Pages (since #49). Drop the deploy job, keep the VitePress build as an on-demand check with a regular artifact. Closes #123 Co-authored-by: ajianaz <ajianaz@users.noreply.github.com>
