Adds a reusable Python helper for copying a decrypted ColorNote JSON export while excluding records by color_index.
Also adds .gitignore rules for generated backup/export artifacts (*.backup, *.json, *.jex) so decrypted data and Joplin exports stay out of git.
Validation:
python3 exclude_by_color_index.py decrypted_notes.json /private/tmp/decrypted_notes_without_color_index_3.check.json --exclude-color-index 3
