feat: one-click update.command for non-technical users - #4

Add a double-click updater so the end user (a non-technical teacher, no git)
can pull the latest version without re-doing setup.
- update.command downloads the latest GitHub archive via built-in curl/unzip
and copies it over the folder; .env and downloaded transcripts are never in
the archive, so they survive untouched. Script body is wrapped in { } so it
safely replaces itself mid-run.
- README: "Keeping the app up to date" section with the double-click flow and
the one-time unidentified-developer note.
