[TEST] Untested log_webhook_processed metric function

Added comprehensive unit tests for hookwise/metrics.py to achieve 100% code coverage. This includes tests for logging helper functions and the RedisMetricRegistry sync and error handling logic. Also improved the global Redis mock in tests/conftest.py to ensure test suite stability.
