Bulk Mentors Data Update for 2026 cycle

Description

This PR:

• does a bulk update for all mentor data in the directory. Script in tools folder for updating mentor data was executed in "long-term" mode and with a tweak to properly sort mentors i.e python3 automation_mentors.py samples/mentors.xlsx ../_data/mentors.yml long-term w 0
• data used was taken from "All approved Mentors" sheet (this sheet has also been updated to reflect responses from the interest form.
• all mentors that answered "No" or did not fill the form have been moved to "Inactive mentors" sheet.
• Images of inactive/removed mentors were also bulk-deleted from repo. Images of some active mentors were also renamed to align with standardised approach we now use.

In summary, all active mentor data now align with the automated/script approach of adding mentors.
Some mentors have also been confused about the hours showing on their profile. The PR also adds a difference ad-hoc hours from long-term mentees slots.

(NOTE: this update is only for the current mentor directory view on the website, Platform has a lot of open issues so this is a cosmetic update that can be added later)
