deps: bump sha2 from 0.10 to 0.11#8

The two call sites (project::canon and records::hash) consume the standard Digest + Sha256 trait surface, which is unchanged in 0.10 → 0.11. record_commit_sha and content_hash output is byte-identical; the index-hash version prefix doesn't need bumping. 373 tests pass, fmt + clippy -D warnings clean.
