About the changes

Migrates to pnpm 11.x, and since pnpm 11 requires node 22 and node 20 reached eol in March, we're stabilising on node 22. In additions adds another task for generating sbom artifacts on release and attaching them to the GH release, so they're available for download for who ever needs them.
