docs: fix project metadata repository URLs

Summary

• update pyproject.toml project URLs to use the canonical THOClabs/NIGHTWATCH repository slug
• keep README links unchanged since they already point at the canonical repo

Verification

• Confirmed the old THOC-Labs/NIGHTWATCH repo, docs, and issues URLs return 404
• Confirmed the THOClabs/NIGHTWATCH replacements return 200
• Parsed pyproject.toml with Python tomllib and confirmed no stale THOC-Labs URLs remain
• Ran git diff --check
