Drop AlgebraicPetri/Catlab from the docs project because AlgebraicPetri 0.8.x (pinned by ModelingToolkit 11) requires Catlab 0.14, which conflicts with the modern Optimization/SciMLBase dependency tree. Align remaining docs compat with the package bounds and exclude AlgebraicPetri-only doc pages from makedocs. Co-authored-by: Cursor <cursoragent@cursor.com>

Summary
Pkg.instantiateunsatisfiable requirements for Catlab).AlgebraicPetriandCatlabfromdocs/Project.toml: AlgebraicPetri 0.8.x (required by ModelingToolkit 11) pins Catlab to 0.14, which conflicts with the modern Optimization/SciMLBase/SymbolicIndexingInterface stack needed by EasyModelAnalysis 1.4.ModelingToolkit = 11.26,Optimization = 5.6,SciMLBase = 3.5,OptimizationMOI = 1.3).makedocsuntil upstream AlgebraicPetri supports MTK 11.Supersedes the stalled CompatHelper bumps in #251 and #252, which cannot both be satisfied together with MTK 11.
