Rename crate to just `posthog`?

Description

I can't see any reason not to do this. Also, it's a pet peeve of mine when the -rs is slapped on a crate name, just for me to remove it in my Cargo.toml via a name alias :)

I went ahead and claimed the posthog crate so no one could snatch it after opening this issue, though I'm open to transferring it if this is desired.

Hey @hwittenborn, appreciate you doing that. I can totally understand the whole -rs suffix being unnecessary!

As far as migration goes, we could likely mirror the same release across posthog/posthog-rs and update our documentation to point at posthog, then retire posthog-rs down the road.

I'd say that if you wanted to transfer it, the owners of https://crates.io/crates/posthog-rs are the right people to transfer to just to keep it consistent.

I like the mirror/retire approach as well, for the time being my manual rename works just fine.

crates.io should improve their security, removing you was literally a single click, no confirmation whatsoever 😆

@dustinbyrne we want to cut the PostHog Rust SDK v1 GA once the v1 capture is fully rolled out (WIP), i think the package rename could be part of that
