refactor: remove unused demo runner, demo data, and env helper from CLI

What

Removes three unused files from the CLI package (734 lines):

• runners/cli/src/ui/demoData.ts (679 lines) — mock timeline/event data for a UI-demo scenario.
• runners/cli/src/ui/demoRunner.ts (48 lines) — runUiDemo/buildDemoTimeline, with no --demo command wiring them up.
• runners/cli/src/lib/env.ts (7 lines) — loadEnvFromFlag, never imported (each command inlines dotenv).

Why

This is unused scaffolding that ships in the published CLI and confuses new contributors. Verified unreferenced via grep across runners/cli/src before deletion.

Verified

npm run typecheck (authoritative for dangling imports), npm run lint, npm run format:check all pass; committed with the full pre-commit hook (incl. gitleaks), no --no-verify.
