Update dev version to 2.0.1

Description

• Update version to the smallest incremental : 2.0.1
• Allow dev pre-release tag in version CMake does not allow pre-release tag

Motivation

Having a version number on dev branch equals to the last release version is inconsistent, and prevent any tooling to make the distinction between those two.

Note that the next release won't be necessarly 2.0.1. But it it will superior or equal to it, and definitely not 2.0.0.
