docs: use american english spelling - #201

Convert British spellings to American English in hand-written code, comments, UI copy and docs (owner rule, 2026-09-18): behaviour, labelled, normalise, tokenise, analysed, centre, recognise, serialise and the rest, 216 words across 76 files. `sprout corpus diff` Markdown now says "Not analyzed."; test names and private helpers follow. Kept: the `analysed`/`not_analysed_reason` fields of `sprout corpus diff --json` (commented), GitHub's `cancelled` literal, verbatim EU AI Act terms, and the plant-care corpus plus eval data that quotes it.
check-tuning-scope fingerprints tunable modules by their AST, docstrings included, so a spelling-only docstring edit in retrieve, lexical, guards, confidence or the providers reads as tuning and needs a Tunes-Against citation that would be false. Those 15 docstring lines keep their original spelling; the comment edits in the same files stay, since comments are outside the AST.
