fix(release): validate legacy recovery tags from main

What changed

• Validate recovery tags with the release-version script from main.
• Keep the tag checkout unchanged so the release still builds the exact requested source.
• Correct the documented recovery command to use --ref main.

Verification

• Recovery run for RatelDesk-0.1.1-beta.3 completed successfully.
• Restore, build, tests, container builds, archive runtime checks, GHCR image pushes, and release asset upload all passed.

Fixes the legacy product-prefixed tag recovery path without adding workflow gates.
