Helm v3.17.3 failure in Lab 2

When following the instructions for Lab 2 (https://github.com/solo-io/workshops/tree/master/gloo-mesh/core/2-7/omni#lab-2---deploy-and-register-gloo-mesh-), the following error is encountered when running the helm upgrade --install gloo-platform-mgmt gloo-platform [...] command:

Error: decompressed chart file "gloo-platform/values.schema.json" is larger than the maximum file size 5242880

A workaround is to use an older version of Helm.

However, according to one of the Helm developers (helm/helm#30738 (comment)), this was a breaking change introduced in Helm v3.17.3 to fix a security issue. Hence, future versions may not work either, and would instead require a change to the Gloo charts. Perhaps the status of helm/helm#30738 can be monitored in the short term.
