Subject: [PATCH] ci: persist sccache and align documentation tests with
 nightly

Enable sccaches GitHub Actions backend so compiler artifacts can be
reused across CI runs while preserving the existing rust-cache target
caching behavior.

Run documentation tests explicitly on nightly, matching the toolchain
already required by the documentation build. Update the documentation
CI job to install nightly directly instead of using stable for doctests.

This keeps the existing cache layout intact while removing the
unnecessary toolchain mismatch in the documentation job.
