Subject: [PATCH 2/2] ci: Revert shell lint steps to find-based file discovery

The paths-filter file-list approach required a predicate-quantifier
workaround to exclude examples/, adding complexity without removing any
real risk. Reverting to find/grep keeps the exclusion working as before
and adds the previously missing dot_profile pattern.
