chore(deps): regenerate uv.lock after sphinx-autodoc-typehints drop

pyproject.toml no longer depends on sphinx-autodoc-typehints (removed
from the docs extra), but uv.lock still carried the resolved package
entries and the requires-dist line. This brings the lockfile into sync
with the manifest. Detected when `uv run --extra docs sphinx-build`
auto-resolved the lockfile during a docs build.
