Subject: [PATCH] docs: correct the quickstart unit-test count

The snapshot showed 2752 passed from an earlier suite; the current suite
collects 2756 (2755 passed + 1 poppler-dependent skip). Update the expected
line and note that the meeting-skill test skips when poppler is absent, so the
count is self-explanatory and agrees with the README's total.
