Release v0.1.2 of openxos-ghost, the CLI-focused network and web evasion probe tool.

Includes a cross-platform build fix for non-Windows targets by adding a non-Windows configure_terminal() stub.
Syncs package metadata and documentation version references for a clean release.
Validated with cargo fmt, cargo clippy, full test suite in both debug and release modes, and a live install/scan verification.
Tag pushed to origin as v0.1.2.
