Upgrade to Jupyter book/Jupyter book 2? #1

Hi @jburel ,

I just stumbled over this repo and was wondering whether an upgrade to Jupyter book 1/2 would be interesting? It comes with a very simple but powerful config layout.

An example: https://ngff-spec.readthedocs.io/en/latest/

Plus, it natively supports jupyter notebooks and their execution upon build, i.e., there's no need for sphinx-extensions. Notebooks are quite integral to courses so that would be nice?
