Build errors and missing dependencies in requirements.txt

@aterrel Hi, I tried building the docs locally and ran into the same missing-extension errors (myst_parser, sphinx_copybutton, sphinx_togglebutton, linkify-it-py, etc.).
I see that a PR has already been opened to address this, so I won’t duplicate the work. Happy to help review or test the fix locally if needed.
