Add documentation for cocoa compatibility map

Description

We are planning to make regular updates with the Cocoa SDK and it would make sense to keep track of which Sentry KMP SDK is compatible with which Cocoa SDK version

Similar documentation concept: compose-compiler and kotlin version

Goals

• Add it to sentry-docs
• The docs need to be updated every time the cocoa sdk bump is included in a new release - ideally this can be automated in the future

Those need to be merged and released in 0.4.0 first.
