According to SteamDB, it should be easy to extract ROM files from Street Racer Collection. SR_N16.sfc, SR_NP8.gb and SR_S16.md can be found in StreetRacer_Data/StreamingAssets/carts/, with StreetRacer_Data/StreamingAssets/b/ also containing cgb_boot.bin, dmg_boot.bin and spc700.rom. I assume that cd.bin and cd.cue in StreetRacer_Data/StreamingAssets/disk/sracer/ are a disc image of the DOS version.
