그리고 RS485 선으로 오가는 모든 원본 데이터를 8899 TCP 포트로도 그대로 뿌려주려면

이렇게 추가하면될까요.

esphome 26.03 버전업이 되면서 구성이 변경 되었어요.
esphome 을 최신 버전으로 업데이트를 하시거나.
uartex 버전을 최신 버전이 아닌 다른 버전으로 지정 하시면 됩니다.

tcp는 모든 원본 데이터를 원하시는지 uartex에서 파싱한(수신, 송신)을 원하시는지에 따라 구성 방식이 달라서요
아래 글도 확인해 보시면 uartex에서 파싱한 데이터를 tcp로 전달 해주는 방법 입니다.
