This PR updates the environment variables documentation in README.md and both language variations of the install guides (docs/INSTALL_EN.md, docs/INSTALL_PL.md). It ensures that recently added variables like CONTACTS_FILE_PATH and the language-specific ElevenLabs voice overrides (ELEVENLABS_VOICE_PL, ELEVENLABS_VOICE_EN, etc.) are properly documented, matching the current codebase state. Mermaid diagrams were reviewed and confirmed to still accurately reflect the architecture.
