Use platform name in more places

The platform name is used everywhere it needs to be. But there's some commented example code that could be updated as well, such as the create_project() function in e2e utils.

• Search overall dir for Fly. Anywhere it appears, consider using the actual platform name.
• Document/ changelog.
• Merge.
