Anonymise C3D files for sharing

This is a request from @CarolineORLAUKeele 😃

C3D files contain patient information (in the file path names, I believe), which means it is not possible to share them with researchers outside the lab or with the public.

It would be great to have a bit of code that takes a C3D file and removes the patient information, leaving everything else the same.

@CarolineORLAUKeele if there is anything else you'd like to add, please commend below!
