docs(readme): rewrite README.es.md to match English README structure exactly

Full rewrite of docs/README.es.md: same section order, same tables, same
emoji anchors, same ADR table with Evolith column, same role-based paths,
same UMS vs Evolith comparison — fully translated to Spanish. Paths adjusted
from docs/ context (../infra/, ./architecture/, ./domain/ etc.). Replaces the
old 83-line stub that had a completely different structure from README.md.
