allow providing a custom merging algorithm

## what
We could add an API that allows users to provide a custom merging algorithm.
This should be easy to implement, we just need to provide a way to change the implementation of the UpdateBatcher.

## why
This way users can decide how conflicting updates from multiple clients are merged. We could also add different merging algorithms as extensions to socketdb in the future.
