Twrp wont display the correct date/time

Hey so im on a OnePlus 3T and TWRP is convinced that it's sometime in 1970 when I do a backup and I append the date and if I select my timezone, its so far off. Phone's system shows correct time.

I am able to change the date with

date MM/DD/24HR/YYYY, where:
MM is 2 digit month
DD is 2 digit day
24HR is the hour and minute (ex 6:10 am is 0610)
YYYY is the 4 digit year

As long as I don't leave recovery, then it'll go by the date I set it to. Once I leave, it's back to sometime in 1970. I do not have the /persistent partition. Phone's date is only affected in TWRP since when the phone is on it knows the correct date and time.

If I use

date (currentDate)

It will return printed out to the TWRP terminal, but it will first display:

__bionic_open_tzdata: couldn't find any tzdata when looking for EST5!
__bionic_open_tzdata: couldn't find any tzdata when looking for posixrules!
date (currentDate).

I'm assuming where I see

I:TWFunc::Fixup_Time: Pre-fix date and time: 1970-01-04--08-02-46
I:TWFunc::Fixup_Time: Setting time offset from file /sys/class/rtc/rtc0/since_epoch
I:TWFunc::Fixup_Time: will attempt to use the ats files now.
I:TWFunc::Fixup_Time: no ats files found, leaving untouched!

Is The part I am trying to stop from happening? And it's doing this since I don't have a /persistent partition, the TWFunc is seeing it isn't there so it just auto setting a time? Just wondering if I got that right, I'm still learning.

To be clear- I know that my objective is not to stop TWFunc from auto setting a time, and my goal is get it to properly read the system time that's set that would usually be located the ATS file(s).
