Add example: edtech-tutor evaluated against FERPA/COPPA + EU AI Act

Goal

Create examples/edtech-tutor/ showing a K-12 / university tutoring assistant evaluated against gopal's industry_specific/education/v1/ (FERPA, COPPA, proctoring, grading) + EU AI Act.

Why this matters

Education AI is a uniquely tricky compliance space — minors are involved, multiple jurisdictions overlap, and parental consent rules vary. A worked example helps EdTech teams reason about policy choices.

Files likely involved

• New: examples/edtech-tutor/ (six-file shape)
• examples/README.md table entry

Acceptance criteria

• Contract with 6-10 interactions: a homework-help dialogue + a few transparency questions + a parental-consent scenario
• policy_config.yaml selecting eu_ai_act + education + global
• FERPA + COPPA disclosure modelled in the contract metadata
• expected_report.md covers age-appropriate-content, grade-disclosure refusal, and academic-integrity routing
• Honest scope: school-district approval and parental consent remain mandatory regardless of report
