Add Plausible Analytics

Adds the Plausible tracking script to <head>, configured via
hugo.yaml (params.plausible.domain / script_url) so the domain or a
future self-hosted instance can be changed without touching the
template. Only injected on production builds (hugo.IsProduction) so
local `hugo server` development never sends data to Plausible.

Domain defaults to oursqlfoundation.org (the site's own baseURL) on
Plausible Cloud. No cookie banner needed — Plausible is cookieless.
