a single dealbot should be able to talk to both mainnet & calibration

we need to do the following:

• be able to set mainnet & calibration wallet keys
• be able to set retrievals/data-check timing env vars separately (prefix all env vars?)
• emit any/all prometheus metrics with label "network" equal to either "calibration" or "mainnet"
• toggle in UI, or separate links to betterstack dashboards for mainnet/calibration (see Simplified dealbot functionality for GA #239 )

Why important?

We want staging to be our internal test bed and to have confidence that when we promote to production that dealbot will work on mainnet. The problem with the current setup is:

1. Mainnet is never tested before we push to production.
2. Public calibration metrics can get borked by the latest commit to master/main.

@SgtPooki sounds like this is either a "M4.2: Mainnet GA" or "M4.5: GA Fast Follows". What do you think?
