Fix Euro-Office Docker Container - Persistent Volume Support

It seems like there is an issue using Persistent Volumes using this docker container.

Followed the instructions on euro-office.github.io, but they didn't work.

I think something within the DockerFile has to be inserted for it to work.

Yeah - I had issues to
So I created it without the persistent volume
than copied the files to the place I would go to mount from
docker cp euro-office:/etc/euro-office/documentserver/. /home/docker/euro-office/config/ docker cp euro-office:/var/log/euro-office/documentserver/. /home/docker/euro-office/logs/ docker cp euro-office:/var/lib/euro-office/documentserver/. /home/docker/euro-office/data/
and than deleted the container again and recreated it with persistent storage
and like that it's running...

Unfortunately, the triage system doesn't seem to be working.
Even the dev who created it is ignoring it...
